Ingredients:
Dry Mix:
• 50g self-raising flour
• 50g plain flour
• 50g corn flour
• Pinch of salt
Wet Mix:
• 240g whole eggs
• 150g Saweet Baking Mix
• Vanilla to taste
Method:

Preheat oven to 180°C fan forced.

Line a 6-inch baking tin with greaseproof paper.

Whisk eggs and Saweet until light and fluffy.

Sift and fold in dry ingredients carefully.

Add vanilla, pour into tin, and bake 28 mins or until skewer comes out clean.

Cool gently on rack. Handle carefully to avoid centre collapse.
